I have a confession to make. My last recipe Chili Chocolate Mug Cake back in February, was one of the last times that I ate a sugary treat. I found myself craving sweet things a little too often.  I took some time to re-evaluate my diet and since then I’ve been eating a diet based less on snacks that should be eaten in moderation and I’ve been incorporating lots more ‘good’ greens.

I made this change primarily to see if it would help some minor ailments (it has for me) but as a side note I’ve lost 10kg. I feel a lot more energetic. I’m not going into details about dieting here on this blog, or tell people how/what/when/where you should eat – it’s up to you, but I what I will share with you today is a simple recipe that I made up – for these Vegan Protein Balls. They are YUM! The protein mix is sweetened with Stevia.

Vegan Protein Balls Ingredients

You will need:

  • Prana Protein Powder. Vanilla Bean & Maple.  I used the measuring scoop that comes inside the packet (for the protein powder) for all of the ingredients listed below.
  • Almond Meal. I buy the Aldi Brand.
  • LSA. Linseeds, Sunflower Seeds and Almond Meal. Purchased from Coles.
  • Golden Flaxseed Flour. Purchased from Coles.
  • Shredded Coconut.
  • Cashew Nuts.  Roasted (Toasted) and Salted
  • Coconut Oil.
  • Bowl for mixing
  • Ziplock bag for crushing cashew nuts (after measuring, crush before adding to mixture)

How To:

Vegan Protein Balls MethodBasically where I have said Protein Powder x 2 – that’s two scoops – using the scoop that came in the packet and continued using the scoop for the rest of the ingredients for consistency. If you don’t use this brand or have a different scoop, it will just be a case of taste testing. Just keep the ingredients in similar proportions and you should be okay. When it comes time to add the coconut oil – add sparingly until you get the correct consistency.

Mix thoroughly and then roll into about 4cm balls = approx. 30g per protein ball.

This mix will make about 12 balls.

Adorablest Vegan Protein BallsRefrigerating them will harden them a little to bite sized morsels of deliciousness 🙂 Picture above is just after rolling, so you can still see the ‘glisten’ of the coconut oil.

I’ve weighed all the ingredients (for example 1 scoop of LSA weighs different to 1 scoop of almond meal) and then entered all the ingredients into the Food Standards Australia Nutrition Panel Calculator for you. Yes I know there are about a million mug cake recipes out there, but this one is a little different, I promise.

So … Valentine’s Day is coming up and if you like a little hot and spicy in your life 😉 this Chili Chocolate Mug Cake recipe is for you.  This is my own invention and this treat is so easy, but oh so yummy with the coming together of a couple of (my) two favourite things – TABASCO sauce and NUTELLA. Read on for the easy recipe in all its deliciousness!

Chili Chilli Chocolate Mug Cake Easy 4 Ingredients Recipe

You will need:

  • Self Raising Flour. Otherwise use Plain Flour with Baking Powder (NOT Baking Soda!) to make the ratio of SR Flour.
  • Nutella. A staple in the cupboard here, but buy if you need.
  • Milk. Skim was in our fridge, but Whole Milk or other will work just fine.
  • Tabasco Pepper Sauce. The PLAIN variety. As delicious as it is, the Chipotle one might not taste the best in this recipe!
  • Mug. Since this is a Valentine’s Day post, I’m using this heart mug!
  • Long Metal Spoon. For mixing and eating.

Chili Chilli Chocolate Mug Cake Easy 4 Ingredients Recipe

How To:

As with many of my recipes, I don’t measure exactly, but somehow they still manage to turn out (mostly 🙂 ) and this is not an exact science, but what you do want is about –

  •   A little less 1/4  mug milk
  • 1/4  mug Self Raising Flour
  • 2 or 3 good dollops (teaspoon was used) of Nutella
  • A dash (or 10 – I love TABASCO sauce! depending on your hot and spicy tolerance) of Tabasco Pepper Sauce

You want to end up with a slightly thick batter mix and NO HIGHER THAN 1/2 full in your mug. It really raises and fluffs up, so don’t fill up to the top, or you’ll spend more time than this takes to cook, cleaning your microwave.

I’ve tried a few different settings and recipe ratios and this one comes out moist and the Chili Chocolate taste is just about right I think.

DIY – Raw Date & Nut Energy Balls

diy raw date nut energy balls adorablestDIY – Raw Date & Nut Energy Balls. Sometimes I feel like a sweet treat, but I also don’t like eating too much sugar, so today I made these.

My measurements may not be too exact, as I just sort of ‘winged it’ as I went along, with what I had available in the cupboard, so feel free to experiment too! You want to end up with a fairly sticky mix, that holds together. Mix in a mini blender or similar.

  • 1/cup raw pecans
  • 1/cup raw peanuts
  • 1/2 cup raw almonds.
  • BLITZ.
  • 4 fresh dates (pitted!)
  • 1/cup sultanas
  • 1/cup raw rolled oats
  • 1 teaspoon honey (I used Capilano natural pot set)
  • 1 teaspoon coconut oil
  • 1 teaspoon wheatgerm
  • Pinch of cinnamon
  • BLITZ.
  • Transfer to a bowl
  • Add 1/cup puffed rice (I used Freedom Foods, Aussie Grown Rice Puffs)
  • Mix gently and form into balls.
